Yacon is an Andean root originally from Peru, very sweet and rich in oligofructose (also known as fructo-oligosaccharides or FOS), a complex carbohydrate the human body cannot recognize as there is no enzyme to absorb it.

True yacon syrup has low glycemic index (as low as 1) and is the best sweetener for diabetics and anyone concerned about blood sugar and weight management (in terms of GL, taste and nutritional content).

Peruvian Harvest Yacon Syrup is only made from the nectar of carefully selected roots.
